Dover Corporation has announced that Unified Brands, one of its operating companies, is to launch new touch-screen temperature controls for sous vide and cook-chill solutions.
The controls have been designed for three products that make up part of the company’s CapKold line: the Sous Vide Cook Tank, Water Jet 100 and Electric Sous Vide Cooker/Chiller.
Dover claims that the new controls will allow foodservice operators to set cooking temperatures with greater accuracy and precision, and will ensure the risk of drying out or overcooking foods is heavily reduced.
CapKold’s sales manager Tim Franks, who is also a chef, spoke positively about the innovation. “Not only can I bring temperatures up at a certain rate, but I can also cook frozen food by setting a lower cooking temperature, and then a higher cooking temperature, before the food needs to be chilled and stored,” he said. “This is groundbreaking for the restaurant and foodservice industries.”
The new controls have further benefits beyond improving the quality of cooked products – they can also be used by operators for labelling and digital documentation, ensuring a more streamlined and automated approach.
CapKold is one of several of Unified Brands’ product lines with a leading position in the catering industry, with others including Groen, Randell, Avtec, A la Cart, and Power Soak. Based in Georgia, Unified Brands is part of the Refrigeration and Food Equipment segment of Dover Corporation.
