Data Driven Cooking (DDC) by Unox has been named as one of The National Restaurant Association’s top 25 Kitchen Innovations for 2019.
Winning recipients will have addressed operator concerns covering labor, inventory management, cleanliness, energy and water efficiency, food safety, sanitation, cross-functionality and space-saving measures.
DDC monitors oven usage by analyzing and recording cooking times, menu items, energy and water use.
The model also uses artificial intelligence to recommend operational patterns and new recipes.
Additionally, sensors in the oven calculate volume and mass and can adjust cook times for different size batches.
