Convotherm creates new combi oven range for modern kitchen operations

Convotherm has unveiled a new family of combi ovens that it says will allow professional chefs to run a successful and simplified foodservice operation.

Operators were yesterday guided around the new line-up of Convotherm Maxx ovens at a special virtual launch event, where the brand answered questions from those in attendance.

Convotherm said “many years of learnings and experience” had gone into the development of the unit, which recognises that modern technical design must be measured by how easily tasks can be carried out.

“The new Convotherm Maxx has been developed for professional chefs who want to experience modern combi technology at an ideal price/performance ratio,” explained Arndt Manter, director of product management at Convotherm.

“This new model is a real all-rounder thanks to its powerful, flexible and practical functions which help operators meet the challenges of the new normal, such as hygiene, efficiency and cost-effectiveness. We are certain that with the Convotherm Maxx, we have created exactly the right product for these times, thereby empowering operators to move confidently into a successful future.”

The oven features a seven-inch TFT HiRes glass touch display, which delivers brilliant images and a scroll feature and pictograms that make it as easy to operate as a smartphone.

Hygienic handles made of antibacterial and antimocrobial plastics reduce the multiplication of microorganisms, while energy efficient triple glass minimises heat loss.

The Convotherm Maxx is available as a 6.10 or 10.10 and offers a greater capacity due to an additional shelf.

The oven ensures that every type of baked good or cooked food is given precisely the right amount of moisture, thanks to a sophisticated Self ClimateControl system. If crispy crusts are also required, a special setting provides precisely metered hot air that removes moisture in order to ensure perfect results.

Convotherm said that operators can maintain a stress-free overview of even the most complex processes whether they select the fully automatic or manual mode, or whether they are cooking single or mixed loads, thanks to intelligent features such as Press&Go, TrayView and TrayTimer.

WiFi and LAN interfaces allow updates and recipes to be managed centrally, while a fully automatic cleaning system can be deployed after service without the need for attendance.
