One of Europe’s most recognised food chains has praised True Refrigeration’s line of products for its performance and reliability.
La Place, which has 60 fresh food outlets, stressed the importance of refrigeration that can keep food at top temperatures when demand is high.
And it has told of how at one of its newest locations in Meerkerk, Amsterdam it has specified True Refrigeration products to deliver on performance, reliability, and pleasing aesthetic.
With such a vast food offering, the majority of which is made fresh to order and in full view of customers, La Place said that it needed a solution that would allow an operation of this scope to function.
Glass front refrigeration was a crucial element for the chain – with a brand message centric around freshness, using only the best ingredients and no artificial additives, it were keen to exhibit this to customers through glass door refrigerators spread throughout the restaurant.
As well as looking good, the refrigeration needed to be versatile, configured to suit service.
Ingredients are stored in True’s T23G model, chopped over a True Prep Table, then wrapped and prepped to be stored in a separate T23G – with a one-hour movement window.
Equipment needed to suit these requirements while withstanding the pressures of a busy service and constant use.
Pieter Rozendaal, La Place store manager, said that equipment that can keep up with relentless use and still be both energy efficient and store food at optimum temperatures is central to the brand.
He said: “Temperature is of the utmost importance. Even with frequent door opening, our refrigeration must be capable to recover quickly to safe temperatures and True have helped us do this and more”.
The La Place chain is based on a modular restaurant design with a great variety of natural, fresh and homemade products in open kitchens.
