Hoshizaki says the number of sushi cases it has shipped to the American and European markets since 2001 recently exceeded 70,000 units – as it revealed it will accelerate development of the product range to meet demand.
The sushi cases are manufactured at its Shimane factory in Japan and used in thousands of restaurants around the world that serve sushi and sashimi.
Thanks to a recovery in demand for the countertop product in recent years, accumulated shipped units in 2021 were 22% higher than two years ago, and 30% more than in 2020.
Hoshizaki said it planned to “accelerate product development” to keep up with demand.

The cases can display ingredients such as raw fish while evenly cooling them from the top to the bottom of the case.
The arch-shaped cabinets allow customers to view the contents inside from any angle and feature LED lighting.
Hoshizaki Group has 16 manufacturing sites overseas. Although it promotes local production and sales, it continues to export ‘Made in Japan’ products that utilise its unique technologies.
